2 Recipes: Fish in Parchment, Beef in Burgundy
Dear Friend,
If you follow me on IG, FB, TicTok, you know I love my Greek/Mediterranean recipes.
Finishing the book, “A Year in Provence” for the 6th time (I’m not kidding), I craved Gallic gastronomy, transporting me to the south of France.
For both dishes I’ve channeled my virtual mentors, #JacquesPepin and #Juliachild, reliable recipe resources, unlike some “influencers” who are incredible editors, yet questionable cooks 😂.
The two recipes below do involve a little elbow fat (skip the grease), but you can definitely master them. When you do you’ll become very popular with hungry family and friends.
Once again, I encourage you to cook as often as you can. When you and I do we are healthier, happier, and leaner ;-)

Poisson En Papilotte
(Fish in Parchment)
Succulently steamed, I think Haddock works best for this dish, but use any fleshy white swimmer your fish monger recommends.
I saw Jacques Pepin make this on one of his PBS cooking shows and I’ve been wrapping poisson en papilotte ever since.
Trust me, open the envelope in front of guests, releasing the fragrant steam and vibrant colors, and they’ll salivate all over themselves.
Nutrition Suggestions
Use wild fish (healthier than farmed), organic vegetables, including whole organic lemons you can eat rind and all, extra virgin olive oil, fresh herbs, and kosher sea salt for maximum flavor and benefit.
Boeuf Bourguignon
Boeuf Bourguignon not only sounds better than its American cousin, Beef Stew, it tastes better.
Adapted from Jacques Pepin and Julia Child’s versions, I’d like to think if they sat at my table, bringing a warm spoonful past their lips, they might nod, “Not bad.”
A whole bottle of red, sweet caramelized onions, and a fine dice of mirepoix take this stew to another level.
Nutrition Suggestions
